CANDIED SALMON DISH

Ingredients:

-One bag of Demererra brown sugar

-One cup coarse salt

-One small jar of minced garlic

Cut salmon into small strips and dry marinade for 24-48 hours turning occasionally.

Remove from brine onto smoking racks and air dry for 6 hours

Smoke for 3-6 hours with apple chips

Dehydrate if needed to achieve desired moisture content
